You really can’t go wrong with buffalo chicken anything in my opinion. I’m also a big fan of making a big batch of something and having it to eat throughout the week for lunches or dinners. Combine those two things and you have this buffalo chicken quinoa salad. It is a healthy meal you can prep ahead of time that doesn’t lack in flavor.
1.5 cups cooked quinoa
1 cup chicken, cooked and diced
1 small onion, chopped
1/2 cup buffalo sauce
1 large carrot, shredded
1 cup chopped fresh spinach
Cook the quinoa according to the package. Let it cool. In a large bowl, combine the quinoa, chicken, onion, carrot, spinach and buffalo sauce. Mix it all together really well.
Serve as a side dish or as an entrée. I love having it as the base of a bowl and adding in extra roasted veggies. Another great option is to serve as an appetizer with crackers. Most recently, I served with smoked gouda flavored Triscuits — amazing!
