I have to admit, we sure didn’t eat too much healthy food on vacation. Lots of good food and drinks on the beach. I’m not complaining, but my body is looking for something a little bit healthier now that we are home. To ease back into things, homemade pizza is a perfect compromise. Some veggies, some protein, but not too boring.
We love to make our own pizzas at home but this was definitely not the day for homemade dough. I picked up a two pack of thin pizza crusts at the grocery store and called it a day. The toppings though were all me. Traditional pepperoni for my husband, veggie for me and BBQ chicken for us to share.
Top store bought dough with your favorite toppings or try out our favorite… BBQ chicken! It always reminds me of a little place in Chicago we used to get take and bake BBQ chicken pizza from when we were dating. 🙂
1 thin pizza crust
1 tsp minced garlic
1/2 chicken breast, chopped
1 cup BBQ sauce – I like Sweet Baby Ray’s
1/2 small onion, thinly sliced
1 cup shredded mozzarella cheese
cilantro leaves, chopped
Preheat the oven to 400 degrees. Spread the minced garlic over the pizza crust. (This is totally optional but adds so much flavor.)
Instead of traditional pizza sauce, spread approx. 3/4 cup of the BBQ sauce in a thin layer onto the crust. Top with your chopped chicken and sliced onion.
Sprinkle the cheese and pop into the oven for about 15 minutes or until the bottom is crispy and the cheese is melted. When it is out of the oven, add another drizzle of BBQ sauce and top with cilantro for a little bit of freshness.
