You can never go wrong with chips and salsa as a snack or appetizer in my opinion. This corn + black bean salsa is a different take on salsa and is super versatile. It is perfect at a party but is also so good on scrambled eggs, as an addition to tacos or in a burrito.

1 can of black beans, drained and rinsed
1 can corn, drained
1 tomato, diced
1 small onion, chopped
1 jalapeno, minced
1/2 tsp minced garlic
1/4 cup chopped cilantro
juice of 1/2 a lime
1 tsp salt
2 Tbsp olive oil
Combine the beans, corn, onion, tomato, jalapeno, cilantro and garlic in a large bowl. Mix well.
Add in the olive oil, lime juice and salt. Add more or less salt and lime juice based on your preference.
