Do you remember the hot lunch in grade school? My sister and I would go through the month’s menu and decide if we wanted to take a cold lunch from home or buy hot lunch for each day. One of my favorite hot lunches to buy was always pita pizza. It was a white pita with pizza sauce and cheese. So simple, but so good.
I started making pita pizzas at home after realizing I had some pitas at home and leftover chicken I needed to use up. These are a great dinner or appetizer and can be frozen for a make ahead meal. My one year old son even loves them! Using whole wheat pitas make them a little bit healthier too.
I made them this weekend for a girls’ night and threw a few extras in the freezer for one night that I am too exhausted after work to cook. This time I made BBQ chicken and buffalo chicken pizzas.
Try making these with any toppings you like or have laying around the house soon! Here is the recipe for BBQ chicken pita pizzas. If you want to go with buffalo chicken pita pizzas, just swap out the sauce!
1 package of whole wheat pitas
1 cup shredded mozzarella cheese
1-2 cups shredded chicken
1 small onion, sliced or chopped
1/2 cup BBQ sauce – I use Sweet Baby Rays
Lay out your pitas in a small assembly line with all of the other ingredients to make the process super simple.
Top each pita with a thin layer of BBQ sauce. The add as much shredded chicken and diced onions as you like. You can always swap out the ingredients for other vegetables or meat.
Cover the toppings with mozzarella cheese. Now you can either put the pita pizzas in a 375 degree over for about 15 minutes until the cheese is melted and the pita is crispy or wrap them individually in plastic wrap and freeze.
