This became one of my favorite salads when I first had it a Panera, so why wouldn’t I replicate it at home? It is such an easy weeknight meal if you have some chicken cooked. Tonight, it was even easier for me because I didn’t even need to cook the chicken. We had left over fried chicken from Nolan’s birthday party this weekend. I don’t usually use fried chicken, but since I had it…. couldn’t let it go to waste!
2-3 large chicken breasts, cooked and shredded
1 large head of romaine lettuce, chopped
1/2 can black beans
1/2 can corn
2 green onions, chopped
1 avocado, diced
1/2 small onion, chopped (optional, I add it for some crunch)
1/2 cup BBQ sauce
1/2-1 cup ranch dressing
In a bowl, add the shredded chicken and BBQ sauce. Mix them together really well to coat the chicken with the sauce. This helps the lettuce not get soggy and every bite of chicken will have plenty of BBQ sauce on it. Put that to the side.
In another large bowl, add the romaine, black beans, corn, onion, green onion, cilantro and avocado. Toss those ingredients together quickly then add the ranch dressing and continue tossing until everything is coated in ranch dressing. (I love adding cilantro to this and any salad because it adds so much flavor.)
Portion the lettuce mixture out into bowls and top each salad with the BBQ chicken. Drizzle with a little bit extra BBQ sauce. The mixture of BBQ sauce and ranch is amazing. Kind of like dipping French fries or chicken fingers in both… Mmmm…
Adding in some tomato, shredded cheese or tortilla strips would be awesome too if you have them! Enjoy!
