Cauliflower Fried Rice

I started making different kinds of cauliflower rice a couple of years ago.  It is so simple and versatile.  I love this version of fried rice to go along side a dinner or add some chicken or shrimp to make it a meal.  You can even buy the cauliflower already riced if you wanted to.


1/2 head of cauliflower

1 cup mixed frozen vegetables

1/2 cup soy sauce

2 Tbsp sesame oil

1 clove of garlic, minced

1 egg

1 Tbsp oil

1 green onion

Start by cutting the cauliflower into pieces if you didn’t buy it already riced.  Put the pieces into a food processor and chop until it is the consistency of rice.  You will need to pulse the food processor for a 1 minute or so.


In a large pan, heat the oil.  Add the garlic and sautee for a minute or until it is softened.  Add in the frozen mixed vegetables and cook until they are heated through.  Add in the cauliflower rice and cook another 5 minutes or so until the rice is golden and crispy on the edges.


Once the rice and veggies are cooked for a few minutes, make a well in the middle of the pan and crack an egg in it.  Let the egg cook for a few seconds and scramble it around while mixing it into the rice.


Finish cooking the egg completely then add in the soy sauce and sesame oil.  Mix everything together and cook another few minutes to make sure everything is heated up.

Top with a chopped green onion and serve like that or add some chicken or shrimp to make it a meal.  So much heathier and maybe even better than take out!
