I have a theory that most of us are either cooks or bakers. Not typically both. I am absolutely not a baker. Probably because baking requires too much measuring. All that measuring creates too many dishes. No thanks. This cake, however, doesn’t require any measuring and can be made completely in just the baking dish. Can you even consider this a cake? Maybe not, but it is delicious and ridiculously simple.
1 can of strawberry pie filling
1 can of crushed pineapple
1 box of yellow cake mix
2 Tbps butter or margarine
In the bottom of a 9×13 dish, dump the crushed pineapple and smooth it into a single layer. On top of the pineapple, add the strawberry pie filling in a single layer.
Once the fruit it in the pan, dump the boxed cake mix on top. Just the powder without any eggs or oil. Weird, I know, but it will be great.
Finally, add pieces of butter or margarine on top of the cake mix. When the cake is baking, the pieces of butter will melt and spread out.
Bake the cake at 350 degrees for about 20 minutes or until the butter starts to firm up and turn golden.
That’s it! Just dump the fruit and cake mix in the pan, add some butter and bake. I can get behind that kind of baking.
You can try different kinds of fruit in this recipe too. Cherries or peaches might be great choices.
