Fresh Salsa

Chips and salsa. Yes, please.  There is noting better than going out for margaritas and eating a few baskets of chips and a few bowls of salsa. Why not make salsa at home too? It is way better than store bought salsa. It is so much fresher and you can decide how spicy you want it. All that good stuff. Here is how I like my salsa.

1 14 oz can of petite diced tomatoes

2 medium tomatoes – I like using plus tomatoes, but any kind will work perfectly

1/2 of an onion

1 clove of garlic

1 jalapeño, with or without the seeds and ribs depending on how spicy you want the salsa

Handful of fresh cilantro

Juice of 1/2 of a lime

Salt to taste

Drain the can of tomatoes and add to a large bowl.

Chop the tomatoes, onion and jalapeño into chunks.  Add these and the rest of the ingredients to a food processor or blender.  Blend these together of 10 seconds or so until they are completely mixed and puréed.  I like to leave it slightly  chunky.

Pour the blended mixture into the bowl with the canned tomatoes and mix it up. I really like to combination of the fresh and canned tomatoes because it has extra texture. Taste it and add more salt or lime if necessary. 

Grab some chips and dig in!
