3 Ingredient Banana Pancakes

Pancakes are absolutely my favorite breakfast. Actually, syrup on anything is amazing. Anytime we go out to breakfast, I have to at least have a side of pancakes.  This vision is so much healthier than regular pancakes though, so I don’t feel guilty eating them.  Not to mention, they are beyond simple.  My son can’t get enough of them either. I usually make a batch of these in Synday and bring them to work and feed them to my son throughout the week.

1 banana

2 eggs

1/4 cup of instant oats

Mash the banana in a bowl really well.  Crack the eggs in the bowl and mix until combined.  Add the oats and mix again.

Preheat a skillet and spray with oil to avoid sticking.  Pour a little bit, about a 1/4 cup, of the mixture into pancake shapes and cook for 2-3 minutes on each side, flipping once, until the egg is cooked through.

These will stay in the fridge for the week and are awesome to bring on the go or snack on during the day.
