After a boozy brunch, date night at the brewery and lunch at the new burger place this weekend, we needed a light, but filling, dinner. I always keep the ingredients on hand for chicken wraps just for nights like this when we’ve had a long day at work. Or just for Monday’s. These wraps are super simple, filling and can be made with anything you have in the fridge. Starting with chicken grilled over the weekend made these wraps even easier.
4 burrito size tortillas
1 small tomato, diced
1/2 small red onion, chopped
1/2 cup shredded cheese
Sweet chili sauce (I use Frank’s)
Spread a tablespoon of sweet chili sauce on each tortilla. Add the chopped chicken, lettuce, tomato, onion and cheese. Tightly wrap them into burritos by folding two sides in then rolling.
Try these wrap with buffalo sauce, different veggies, steak or even roasted vegetables. To make life even easier, while I have all these ingredients out, I make up a couple extra wraps, wrap the in foil and throw them in our lunches for the next day.
By the way, that sweet chili sauce is good on just about anything–grilled chicken wings, baked salmon, sauce on egg rolls. I could eat it straight out of the bottle. 🙂
