I love when my husband volunteers to grill dinner. Or really any meal. That is one less mean that I have to cook. Always a nice break. Sometimes I just don’t feel like a heavy meal on the grill though. Sausage, burgers, steak. Not always my thing. Here is how we made a dinner we both loved. Bruschetta turkey burgers. A burger for him. Bruschetta for me. Best of both worlds.
Thin slices of red onion
Provolone or mozzarella cheese slices
Fresh basil or basil paste
Grill the burgers as normal. When they are just a inure or two from being done, throw a slice or two of tomato, some red onion and a piece of cheese on each burger. Let the heat from the grill melt the cheese. While the burgers are being grilled, put a thin layer of garlic butter on the top and bottom of each bun and toast. You can toast the buns in the oven, on the stove or just throw them on the grill. Once toasted, add the the basil paste. (I found basil paste in the herb section of the grocery store when they were out of fresh basil and I love it!) put the burgers with the topping on the toasted buns, drizzle with the balsamic and enjoy! These are a definite do over in our house.
