Baked Chicken Taquitos

I love making these baked chicken taquitos on Sundays with whatever is in the fridge.  Sometimes it is cheese and hot sauce, so they are buffalo chicken taquitos. Sometimes I add frozen or fresh spinach to sneak some veggies in without my husband noticing.

These freeze really well too, so I usually make a double batch and freeze half for those nights I don’t feeling cooking.  You know how those night are..

1 package of flour tortillas

1 large chicken breast, cooked and shredded

4 oz softened cream cheese

2 Tbsp hot sauce

1/2 cup shredded cheese

Mix the chicken, cream cheese, hot sauce and cheese in a bowl.  Spoon a heaping tablespoon or so into eat tortilla.  Roll the tortilla up and place onto a baking sheet that has been sprayed with oil.  Roll tortillas until the mixture is gone. I got about 8 out of this recipe.  Once all of the taquitos are rolled, spray the tops with more oil and bake at 375 degrees or until golden and crispy.
