Bruschetta Orzo Salad

I love this salad during the summer as a side dish or it can easily become a delicious lunch by adding grilled chicken. Sometimes I cook up a batch of this on Sunday and eat it throughout the whole week. 
1 cup orzo pasta

1 large tomato, diced

2 green onions sliced, greens and whites

4-6 fresh basil leaves, chopped

2 Tbsp red wine vinegar

3 Tbsp lemon juice

1 clove of garlic, minced finely

Garlic salt to taste
Cook orzo per instructions on the box. I usually cook the orzo a minute less than the box says because I like it to have a little bite to it. 

While the pasta cooks, chop the other ingredients. 

Drain and rinse the orzo in cool water. Mix the cooked orzo withe the chopped ingredients. Add the lemon juice, red wine vinegar and salt. 

Toss everything together and you’re all set! Easy and delicious!
